Hey girlss! Happy Mothers day!!! Hope it was a great day and that all the moms out there felt special. They certainly deserve it! In fact, everyday should be mothers day–they do SO much. I absolutely love my mom. She’s my rock and has been with me through thick and thin. I couldn’t ask for a better mom 🙂
Today’s eats were fantabulous–full of healthy foods that I enjoyed fully. I listened to my body especially well which just feels amazing. After a year of having no hunger signals/ignoring them, listening and responding to my body’s needs is so awesome!
Okay, here ya go–the EATS.
- 1/3 cup oats, 1/3 cup both water and milk
- a banana
- cinnamon and a wee bit too much brown sugar (note the brown sugar WATER 😀 )
- both dark and butterscotch chips
- organic peanut butter
- SURPRISE: I put a leftover oatmeal pancake at the bottom of the oatmeal which warmed it up and was FANTASTIC to eat with each bite. I love little “surprises” in my oats 😀
My brother had a soccer game after nursery was over, so I went to that and sadly they lost. But he played awesome. I am beginning to think I’m a bad luck charm.
Before the game, my mom and I stopped for lunch at Chipotle. I ordered a salad (romaine) topped with chicken, corn, black beans, salsa, and the BEST guac around. I ate about 2/3 of the salad and it was SO GOOD. Best lunch I have had in a while. Lots of protein which kept me full and satisfied for a while 🙂
I went to yoga immediately after the game and the class was great! There wasn’t a specific focus. Just all around stretching and strengthening. Upon arriving home, I helped my dad with dinner while my sweet potato fries were in the oven. Sweet potato addict over here. And they’re so inexpensive. SCORE. I served mine with lots of ketchup. I also tried Sobe Water. It was so good and hydrating. I’ll definitely be getting more at the store. (Btw, I tried yumberry pomegranate)
For dinner, we had a super fun Mother’s Day dinner. My dad grilled burgers–with lots of topping options: avocado, tomato, onion, ketchup, bacon, salsa-guac (we call it salsa-mole–it’s fantastic! Like salsa meets guacamole) I had a little burger on 1/2 a whole wheat ham. bun topped with tomato, avocado, ketchup, a little onion, and salsa mole. It was delectable. On the side, I had a bean salad courtesy of my grandma 🙂
After hanging out and catching up on y’all’s awesome blogs, I had a little snackkk! Okay, but first, I was asked why I was so impressed with the nutritional stats of these Holey Donuts–I think the stats that they pack are wonderful for a healthy donut. I don’t expect them to have 10 grams of protein per donut or be completely whole wheat, but I do expect them to have good nutritionals. Some are better than others, but none are bad in the least. They have nearly a fourth of the fat a regular donut has and up to 1/4 (give or take–some are 1/2) of the calories. The fact that they are hand made just seal the deal. These are perfect for a sweet treat after dinner.
Tonight I had my favorite donut as of yet. I had the Raspberry Fudge and OH MY GOSH. Everything about this donut had me loving it. It’s topping was fantastic, and the filling– DOUBLE OMG! Enough said–GO GET IT. Haha 😀
(To note–I heated up this donut for 50 seconds and it was warm and soft and fluffy–I definitely found the perfect amt of time for the donuts. This made it over the top [in a good way!] yummy!)
